Blue weber is a domesticated selection of the angustifolia complex, cultivated in Jalisco and four neighbouring states. By law, tequila can be made from nothing else, which makes it the single most planted agave in Mexico and the one most exposed to boom-and-bust price cycles.

Because it is a clonal crop, propagated from offshoots rather than seed, blue weber fields are genetically narrow — an efficiency that carries real disease and climate risk, and a reason many producers now let a share of plants flower.

Flavour comes mostly from where it grows and how it is cooked. Highland (Los Altos) agave tends to give sweeter, fruitier tequila; lowland Valles agave gives earthier, more peppery, mineral spirit.

Highlands vs lowlands

Los Altos, at higher altitude on red iron-rich soil, produces larger piñas and tequila with candied citrus, cooked agave sweetness and floral lift. The Valles around Tequila town give a drier, herbaceous, peppery spirit with more minerality.

Neither is better; blind tastings tend to split on preference, not quality.

Why '100% agave' matters

Tequila labelled simply 'tequila' (mixto) may contain up to 49% non-agave sugars. Only bottles marked '100% de agave' are made entirely from blue weber. Also worth checking: whether the distillery uses brick ovens or autoclaves, and whether the tequila is additive-free.

It can be. Mezcal's denomination permits many agave species, including tequilana, though it is uncommon outside a handful of bottlings.

It means every fermentable sugar came from blue weber agave. Mixto tequila may include up to 49% other sugars.
