Salmiana is a huge highland agave found across San Luis Potosí, Zacatecas and the Altiplano. It is best known as the pulque agave, but distilled it produces a distinctive mezcal that often skips the underground oven entirely in favour of above-ground steam or masonry ovens.

That production choice, not the plant, is why salmiana mezcal is frequently described as the least smoky style in the category — closer in profile to a raw, mineral tequila blanco than to Oaxacan mezcal.

What salmiana tastes like

Bright, dry and mineral: cucumber skin, white pepper, wet limestone and a light vegetal sweetness. Smoke is usually minimal, which makes it a useful entry point for drinkers who bounced off heavier Oaxacan bottles.
