Tepeztate grows out of near-vertical rock faces, its broad wavy leaves splayed like a fan. It is the slowest of the commonly distilled agaves: twenty to thirty years to reach maturity, and harvesters often have to rope down cliffs to cut it.

The long life shows in the spirit. Tepeztate is the most polarising variety on any mezcal list — intensely green, herbal and vegetal, with a bright acidity that some drinkers read as jalapeño or bell pepper and others as fresh-cut grass and unripe fruit.

It is almost always a small, occasional bottling. Because so few plants reach maturity in any given year, tepeztate is one of the varieties most at risk from demand outpacing regeneration.

What tepeztate mezcal tastes like

Green chilli, bell pepper, wet herbs, citrus pith and a saline mineral edge, with fruit arriving late. It tends to be more acidic and more aromatic than espadín and far less sweet than tobalá.

Tepeztate is a variety to taste at natural strength. Cut to 40% it thins out and loses the herbal top notes that make it worth the wait.

Buying tepeztate responsibly

Ask whether the producer plants tepeztate as well as harvesting it, and look for batch information on the label. Given the maturation time, every bottle represents a plant older than most drinkers' children.
