Lechuguilla
Lechuguilla is a wild-agave distillate from Durango, Jalisco and Zacatecas, made from small highland agaves outside any denomination of origin.
Lechuguilla is a regional name for several small wild agaves — most often maximiliana in Jalisco and durangensis in the north. Because it falls outside the mezcal denomination in many states, bottles are frequently labelled destilado de agave abroad.
Production is almost entirely family scale: wild harvest, pit roast, open-air fermentation and a small pot or refrescador still.
Flavours run bright and wild — green fruit, herbs, minerals and a lively acidity that makes lechuguilla a favourite among agave collectors.
