Tuxca
Tuxca is an agave distillate from the Tuxcacuesco region on the Colima–Jalisco border, typically blending cultivated and wild agaves.
Named after Tuxcacuesco, tuxca is made in a handful of tabernas straddling the Colima and Jalisco border. Families often blend angustifolia with wild highland agaves in a single batch.
Fermentation runs long and open, and distillation often happens in hybrid Filipino-style stills with wooden bodies and copper condensers.
The profile is rustic and savoury: cooked agave, brine, smoke and dried herbs.
